Grandpa's Paprika Shrimp

You're going to love this spicy seafood dish, recreated in remembrance of my late grandfather and our adventures in Mexico. I like to serve this on top of mashed cauliflower with a side of spicy steamed kale.

Place the ghee and oil in a large pan and melt over medium high heat. Once the ghee has melted add the shrimp, paprika, chopped garlic, salt & pepper to the pan and cook for 4 - 5 minutes until the shrimp are pink and opaque. While shrimps are cooking cut half of your lemon into thin rings for garnish and reserve the other half to squeeze onto the cooked shrimp. Finish the shrimp with fresh lemon juice and serve with the sliced lemon. Serve hot with your desired sides or store leftover shrimp for tomorrow's lunch served cold on a bed of fresh arugula, drizzled with olive oil and more lemon.
